They are very tough and can be difficult to dehull – only achieved by using special technology, but that’s exactly what makes it possible for all products, made from it, to retain all nutrients – vitamins A, B and E, proteins and minerals – zinc, magnesium, manganese, phosphorus.
It contains much more protein than common wheat.

During the dehulling process, we strive to subject the grain to as little contact as possible in order to preserve its qualities, its integrity and to get an authentic product with a richer taste and a more intense flavor.
