It is obtained by gently pressing the einkorn grain, which releases an enzyme that seals and helps to preserve all of its nutritional properties.
Processed in this way, the grain absorbs much more quickly the moisture that is released during the cooking process. This contributes towards the quicker preparation of any dishes with it as well as for its easier assimilation by the body and much better digestion.
It can be used as a much healthier substitute for rice and bulgur.
