Which ingredients should I prepare in advance?
– 6-7 bunches of parsley
– 4 eggs
– 350 g goat cheese
– 1 onion
– 3-4 cloves of garlic
– olive oil for frying
– salt, black pepper
– about 1 cup of einkorn flour
– about 1 ½ cups of einkorn flakes
How do I cook it?
Wash the parsley, chop it finely and put the salt in. Mix it well and drain the excess juice. Don’t cry too much while grating the onion and don’t forget to pay attention to the garlic by cutting it into small pieces. Blend the eggs and goat cheese together /if you don’t tolerate the flavor of it, substitute it with sheep or cow milk cheese/
Add all previous ingredients in a good-sized bowl, season them with salt and pepper and enhance with our mutual acquaintance – the einkorn flour. Mix thoroughly and if the mixture appears too thin, add more flour.
Shape the meatballs and roll them well in the einkorn flakes – if the quantity of this friend of ours is plentiful, he will make a wonderful crispy crust. The hungriest amongst us have already sampled the meatballs and guessed correctly that this dish is just begging to be accompanied by some yogurt garlic sauce and a glass of chilled white wine.
